How to cook chicken breast

Serves 2 · 25 minutes · pan then oven

Ingredients

  • 2 boneless chicken breasts (6–8 oz each)
  • 1 tbsp olive oil
  • 1 tsp salt, ½ tsp pepper
  • ½ tsp each paprika and garlic powder
  • 1 tbsp butter, lemon wedge

Method

  1. Heat the oven to 400°F (200°C).
  2. Pound the thick end of each breast so the thickness is even, about ¾ inch. Pat dry and season.
  3. Sear in an oven-safe skillet with hot oil over medium-high heat, 4–5 minutes without moving until golden.
  4. Flip, add butter, and transfer to the oven for 8–12 minutes.
  5. Check that the thickest part reads 165°F (74°C). Rest 10 minutes, then slice.

Juicy trick: brine in 1 quart water with 2 tbsp salt for 30 minutes, then pat dry. A short brine helps the meat hold moisture.

Crispy baked chicken thighs

Serves 4 · 10 min prep · 40 min bake

Ingredients

  • 8 bone-in, skin-on thighs
  • 1 tbsp olive oil
  • 1½ tsp salt, 1 tsp pepper
  • 1 tsp smoked paprika, 1 tsp garlic powder
  • ½ tsp baking powder (for crisp skin)

Method

  1. Heat the oven to 425°F (220°C) with a rack over a baking sheet.
  2. Dry the skin thoroughly with paper towels.
  3. Toss with oil and the spice mix, rubbing it under and over the skin.
  4. Place skin-side up on the rack and bake 35–45 minutes.
  5. Done when the skin is deep golden and the meat reaches at least 165°F (74°C); many prefer 175°F for tenderness.
Why the rack? Hot air circulates underneath, so the bottoms do not stew in their own fat.

Homemade chicken soup

Serves 6 · 20 min prep · 1 hour simmer

Ingredients

  • 1½ lb bone-in chicken pieces
  • 2 tbsp olive oil
  • 1 onion, 3 carrots, 3 celery stalks, diced
  • 3 garlic cloves
  • 8 cups (2 L) water or stock
  • 1 bay leaf, thyme, salt, pepper
  • 2 cups egg noodles or cooked rice

Method

  1. Soften onion, carrot and celery in oil for 6–8 minutes. Add garlic for 30 seconds.
  2. Add chicken, water, bay leaf and thyme. Bring to a gentle simmer, not a hard boil.
  3. Skim foam, then simmer partly covered for 45–60 minutes until the chicken is falling off the bone.
  4. Remove chicken, shred the meat, discard skin, bones and bay leaf.
  5. Add noodles to the pot for 6–8 minutes, return chicken, and season to taste. Finish with parsley and lemon.
Storage: cool soup quickly, refrigerate within 2 hours, and use within 3–4 days. Reheat until steaming hot. Cook noodles separately if you plan to keep leftovers.

FAQ

Why is my chicken breast dry?

Usually overcooking or uneven thickness. Pound to an even thickness, use a thermometer, and rest the meat before slicing.

Is pink chicken always undercooked?

Not necessarily, since color can vary, especially near bones. A thermometer reading of 165°F (74°C) is the dependable check.

Should I wash raw chicken?

Food-safety guidance generally advises against it, because splashing spreads bacteria. Pat dry with paper towels and wash hands and surfaces afterward.

Can I use frozen chicken?

Thaw it in the refrigerator first for even cooking. Cooking from frozen is possible for some methods but takes about 50% longer.
